Traditional Gajar Ka Halwa

Ingredients:

  • 1 kg fresh carrots (grated)
  • 1 liter full-fat milk
  • 4 tbsp ghee
  • 1/2 to 3/4 cup sugar
  • 1/2 tsp cardamom powder
  • 10–12 cashews
  • 10–12 almonds
  • 2 tbsp raisins
  • Optional: khoya/mawa for richer taste

Method:  

1. Prepare the Carrots

Wash, peel, and grate the carrots.

Fresh red carrots work best for authentic flavor.

2. Cook with Milk

Add grated carrots and milk to a heavy pan.

Cook on medium heat:

  • Stir occasionally
  • Let milk reduce completely

This gives the halwa its creamy texture.

3. Add Ghee & Sugar

Once milk is absorbed:

  • Add ghee
  • Add sugar

Cook until mixture thickens and turns glossy.

4. Add Flavor

  • cardamom powder
  • raisins
  • chopped nuts

(Optional: add crumbled khoya for extra richness.)

5. Roast Slightly

Cook another 5–10 minutes in ghee for deep flavor.

Serve:

  • Warm in winter 
  • Chilled in summer 

Top with:

  • pistachios
  • almonds
  • silver leaf (optional)

Pro Tips

    • Slow cooking gives best taste
    • Use full-fat milk
    • Add condensed milk for quicker version
    • Desi ghee improves aroma greatly
